Fun with Leftover Mac n’ Cheese

Many people who read my posts can’t indulge in the food adventures I write about because they just aren’t close to any of the awesome places I explore in my blog…and that makes me sad. So today I am taking a different approach.  It is time to have fun with leftover Mac n’ Cheese, SlimFatFoodie style.

A few days ago we made a killer Mac n’ Cheese. Because I am Italian I have no concept of proper portion sizes, so we made enough Mac n’ Cheese to feed 6 people, even though we are only feeding two. We essentially made it using a one to one ratio… half macaroni and half  bechamel with a mix of cheeses.  It was gooey cheesy goodness (a.k.a. “Fat Attack” on a plate).  Once we had our fill I put the leftovers in a container and put it in the fridge. When I took it out of the fridge to get started with this meal it looked like some strange block of cheddar cheese… even more so when I started to cut it up.

Step 1: cut it up into any interesting shape you want.  Get creative, if you feel so inclined, and whip out some cookie cutters or freehand some fun shapes. I was not feeling particularly creative since my stomach was yelling at my hands to move faster.

Step 2: Throw some breadcrumbs in a bowl and beat a few eggs in another bowl.  One at a time, dip into the egg and then roll it in the bread crumbs. Repeat until they are all ready for Step 3.  (I know… “thanks Mr. Obvious”)

Step 3: Heat up some vegetable oil.  I prefer using a cast iron skillet, but any pan will do. When the oil is good and hot start dropping those bad boys in and cook them up until they are a nice golden brown color.  (I am getting hungry as I am writing this post!)

Step 4: Grab some paper towels and lay them out on a plate.  Drop these fried cubes of “amazingness” onto the paper towel so that some of that excess oil gets soaked up.

Anyone like Sriracha Mayo? Grab a 1/2 cup of mayo, 1/4 tsp. cajun seasoning (just my preference) and as much Sriracha as your mouth feels comfortable with.

Plate and serve.  As you can see this is super easy and a good way not to waste leftovers.
